Character description:White crystalline powder.Odorless, refreshing, salty and spicy. Stable at room temperature and air, slight deliquescence in moist air, with weathering resistance in hot air. Lose crystallization water when heated to 150 centigrade. Soluble in water (1g/1.5ml, 25). Insoluble in ethanol. The pH value of 5% aqueous solution ranged from 7.6 to 8.6. There is also a waterless substance and a water substance, which is not commonly used.

The food industry is used as buffering agent, binder, buttermilk nutritional supplement, emulsifier and flavoring agent.
