West Lake Longjing tea stir fry:

The frying system in Longjing, West Lake needs to be done by hand. The usual techniques include "shake, band, squeeze, dump, stand, stretch, buckle, grab, press and wear". Longjing green tea frying technique is complex, according to different different leaf material frying stage were taken to shake, take, Na, extension, left, buckle, quite, grasping, pressure, grinding and other ten methods.
The whole process of tea stir fry is divided into three stages: green pot, moisture regain and glow pot.
Green pot: in 15 minutes, the tea is preliminarily formed into flat, and the tea is fried to seven or eight dry.
Back tide: it is a tea pot that passes through the green pot steps to tide back in the bamboo sieve, and it takes about an hour.
Wok: the tea leaves after the tide is added to the pot and dried, making the moisture less than 5%, and further finalizing. It takes about 20 minutes.
The tea after the glow is cool in the pot and is the finished West Lake Longjing.
